Air Fryer Peach Cobbler is one of those desserts that never goes out of style. Whether for a family dinner, a casual gathering, or any occasion, this air-fried cobbler is a favorite. Using the air fryer makes it super easy, cutting down baking time while still giving you that golden, buttery topping and tender fruit filling. I love that it can be made with fresh or frozen peaches, and stored well in the fridge or freezer, making it a perfect make-ahead dessert.
Toss the peaches with sugar and cinnamon powder. Arrange in a baking dish (pie-like).
8 peaches, ¼ cup sugar, 1 teaspoon cinnamon powder
In a bowl, whisk the eggs, milk, sugar and melted butter.
½ cup sugar, 2 eggs, ¼ cup butter, ⅔ cup milk
Sift in the flour, baking powder, and salt and mix well.
2 cups all-purpose flour, 4 teaspoons baking powder, ½ teaspoon salt
Spoon the batter over the peaches, leaving a little space between spoonful's to allow for expansion as the cobbler bakes.
Bake in the air fryer at 400°F (200ºC) for 18 to 22 minutes, until the peach juices are bubbling and the topping is cooked.
Serve with ice cream.

Notes
Use ripe peaches for the best flavor: If your peaches aren’t quite ripe, let them sit at room temperature for a day or two to soften and develop more sweetness.
Frozen peaches work, too: If fresh peaches aren’t in season, frozen ones are a great alternative. Just thaw and drain them before using them to prevent excess liquid in the cobbler.
Use an appropriately sized baking dish: Your dish should fit comfortably in the air fryer basket, leaving enough space for air to circulate.
Don’t overmix the batter: Stir until just combined to keep the topping light and tender. Overmixing can make it dense.
Leave space in the batter: Dropping the batter in spoonfuls rather than spreading it evenly helps you get the best texture as it bakes.
Check for doneness: You'll know the cobbler is ready when the topping is firm and golden brown. If the center still looks wet, give it a few more minutes.
Let it cool slightly before serving: This gives the juices time to thicken, so you get the perfect balance of fruit and topping in every bite.
