Ingredients

  • 3 large apples Envy apples were used in this recipe
  • 12 sheets of phyllo dough
  • 2 tablespoons butter
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • teaspoon nutmeg

Instructions

  • Your phyllo dough sheets must be thawed before beginning this recipe. Follow the thawing instructions on the box. Phyllo dough sheets dry out quickly once opened so prepare all other ingredients before opening the dough.
    12 sheets of phyllo dough
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Slice apples horizontally into ¼ inch slices. Using a cap, push out the core.
    3 large apples
  • In a small bowl, mix together the sugar, cinnamon and nutmeg.
3 tablespoons sugar, 1 teaspoon cinnamon, ⅛ teaspoon nutmeg
  • Melt the butter in a microwave safe bowl.
    2 tablespoons butter
  • Remove the phyllo dough sheets from the wrapping and place two sheets on your working surface. Brush on melted butter and layer another two sheets on top. Brush the top sheets with melted butter. You will have 4 phyllo sheets in total.
  • Using a pizza cutter or a knife, cut the sheet lengthwise into ¼ - ½ inch strips. Carefully separate the strips.
  • Pick up an apple slice and carefully wrap the strip around and slice and through the center. Each apple slice will use two strips. It’s okay if the strips slightly rip, just press them down and keep wrapping!
  • Once all apple slices are wrapped, place them in the oven for 15 - 18 minutes. The tops and the bottoms of each slice should be browned and flaky.
  • Remove from the oven, sprinkle the remaining sugar mixture on top and enjoy!

Notes

  • Work Quickly: Phyllo dough dries out fast, so work quickly and keep unused sheets covered with a damp cloth while you assemble.
  • Patch Up Rips: If the phyllo dough rips while wrapping, just press it back together. The layers will bake up nicely, and no one will notice!
  • Extra Crispiness: For even crispier results, try baking the apple slices on a wire rack set over the baking sheet. This allows air to circulate underneath, making the bottoms just as crispy as the tops.
  • Apple Alternatives: While Envy apples work great, you can experiment with other firm varieties like Granny Smith or Honeycrisp for a slightly different flavor.
  • Keep It Even: Slice your apples as evenly as possible to ensure they cook at the same rate. This will help you avoid undercooked or overly soft slices.
  • Spice Variation: Feel free to adjust the spice mix to your taste—adding a pinch of ground cloves or ginger can bring a whole new depth of flavor.
