Preheat your oven to 375°F (190°C). In a large skillet, cook the sausage patties over medium-high heat until they are fully cooked and browned on both sides. Once done, set the sausage patties aside.

Using the same skillet, scramble the eggs in the remaining sausage grease until they are fully cooked and fluffy. Remove the pan from heat. In a 9x13-inch baking dish, arrange the bottoms of the mini everything bagels in a single layer.
