  • Preheat the oven to 390°F (200ºC). Grease a 9-inch baking dish with butter to prevent sticking.
  • In a large bowl, combine the flour, cornmeal, sugar, baking powder, baking soda, and salt. Stir to mix the dry ingredients evenly. Make a well in the center, then add the buttermilk, eggs, and melted butter. Stir until the batter is smooth and fully combined.
    1 cup all-purpose flour, 1 cup yellow cornmeal, 1 ½ tablespoons sugar, 2 teaspoons baking powder, ½ teaspoon baking soda, ½ teaspoon salt, 1 ½ cup buttermilk, 2 large eggs, ¾ cup unsalted butter
  • Add half of the cheese, the corn kernels, bacon, and jalapeño. Mix everything together until the ingredients are evenly distributed throughout the batter.

  • Pour into the baking dish and top with the rest of the cheese.
  • Pour the mixture into the prepared baking dish and sprinkle the remaining cheese over the top. Cover the dish with foil and bake for 20 minutes. After that, remove the foil and continue baking for an additional 5 minutes until the top is golden and slightly crisp.
  • Allow the casserole to cool for about 10 minutes before slicing and serving.
