Ingredients

Instructions

  • Preheat the oven to 400°F (200ºC).
  • While the oven is warming up, take your peeled and sliced peaches and toss them with ¼ cup of sugar and the cinnamon powder. Spread the coated peaches evenly in a baking dish.
8 peaches, ¼ cup sugar, 1 teaspoon cinnamon powder
  • Next, in a bowl, whisk together the eggs, ½ cup of sugar, milk, and melted butter until the mixture is smooth. Sift the flour, baking powder, and salt into this mixture and stir until the batter is well combined.
½ cup sugar, 2 eggs, ¼ cup butter, ⅔ cup milk, 2 cups all-purpose flour, 4 teaspoons baking powder, ½ teaspoon salt
  • Spoon the batter over the peaches in the baking dish, leaving some gaps between spoonfuls to allow the cobbler to expand as it bakes.
  • Place the dish in the preheated oven and bake for 35 to 45 minutes, or until the peach juices are bubbling and the topping is golden brown and cooked through.
  • Serve warm, preferably with a scoop of ice cream.

Notes

  • Use Ripe Peaches: The riper the peaches, the sweeter and juicier your cobbler will be. If your peaches are underripe, let them sit out for a day or two before using.
  • Frozen or Canned Peaches Work Too: If fresh peaches aren’t in season, you can totally use frozen or canned ones. Just make sure they’re drained well.
  • Spice Things Up: For a little extra flavor, add a pinch of nutmeg or ginger along with the cinnamon.
  • Crispy Topping Tip: For a little extra crunch, sprinkle some sugar over the batter before baking.
  • Butter Substitutes: If you need to go dairy-free, you can swap out the butter for margarine or a plant-based alternative.
  • Thicker Juices: If your peaches are extra juicy, mix in a tablespoon of cornstarch before adding the sugar and cinnamon. This will help thicken the juices as they bake.
  • Don’t Overbake: Keep an eye on the cobbler towards the end of baking. If the top is getting too dark before it’s fully cooked, cover it loosely with foil.
