  • Preheat your oven to 275°F (135°C). Line two baking trays with parchment paper to prevent sticking. Work in small batches to make sure you can finish assembling the turkeys before the chocolate hardens. Place 6-12 pretzel twists upside down on the tray.
  • Take your unwrapped Rolos and place one on each pretzel, positioning it towards the bottom of the pretzel to leave space for the candy corn feathers.

  • Bake for 1 minute. The Rolos should be softened but not completely melted, making them easier to decorate without losing their shape.
  • After baking, immediately press 3 candy corn pieces into the top of each softened Rolo to create the turkey feathers. Be careful not to shift the chocolate off the pretzel.

  • Once the feathers are set, place two candy eyeballs on top of each Rolo and then press a mini M&M just below the eyes to make the beak. Lightly press it into the softened chocolate to make sure it stays in place.

  • Use red decorative icing to add a small wattle or snood next to the M&M beak for the final touch.

  • Allow the turkeys to set at room temperature for about 20 minutes, or pop them in the refrigerator for 5-10 minutes to speed up the setting process. Repeat this with the remaining ingredients and store your Rolo Pretzel Thanksgiving Turkeys in the fridge until ready to serve.

Notes

  • Timing the Rolos: Heat them just for 1 minute—this softens them enough to work with but keeps their shape.
  • Candy Corn Feathers: Inserting the candy corn is the trickiest part. Be sure to press each piece gently into the top of the Rolo, holding it steady for a second to let it settle into the softened chocolate. This keeps everything in place without causing the Rolo to slide off the pretzel.
  • Beak M&M Placement: When placing the M&M for the beak, use just enough pressure to stick it in the soft chocolate, but don’t push too hard, or the Rolo will squish out of shape. It’s all about a light touch. If it starts to shift, you can lightly reposition it before the chocolate sets.
  • Work in Batches: Decorating the turkeys while the Rolos are still soft is key. If you try to do too many at once, the chocolate may harden before you finish. I recommend starting with 6-12 turkeys at a time, so you have time to carefully assemble them without rushing.
  • Quick Set Tip: If you’re short on time or just impatient to dig in, stick the assembled turkeys in the fridge for 5-10 minutes. This will help the chocolate set faster, so you can serve them sooner. Be careful not to leave them in too long, or the candy might lose some of its shine.
