Preheat your oven to 275°F (135°C). Line two baking trays with parchment paper to prevent sticking. Work in small batches to make sure you can finish assembling the turkeys before the chocolate hardens. Place 6-12 pretzel twists upside down on the tray.
Take your unwrapped Rolos and place one on each pretzel, positioning it towards the bottom of the pretzel to leave space for the candy corn feathers.

Bake for 1 minute. The Rolos should be softened but not completely melted, making them easier to decorate without losing their shape.
After baking, immediately press 3 candy corn pieces into the top of each softened Rolo to create the turkey feathers. Be careful not to shift the chocolate off the pretzel.

Once the feathers are set, place two candy eyeballs on top of each Rolo and then press a mini M&M just below the eyes to make the beak. Lightly press it into the softened chocolate to make sure it stays in place.

Use red decorative icing to add a small wattle or snood next to the M&M beak for the final touch.

Allow the turkeys to set at room temperature for about 20 minutes, or pop them in the refrigerator for 5-10 minutes to speed up the setting process. Repeat this with the remaining ingredients and store your Rolo Pretzel Thanksgiving Turkeys in the fridge until ready to serve.
