Cream the butter and sugar together in a large bowl until smooth.

Add the eggs, and mix until fully combined. Then add the vanilla extract and mix well.

In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this mixture to the mixer, combining everything well.

Stir in the food coloring until you reach the desired shade of green.

Cover the dough and refrigerate for 2 hours to allow it to chill.
Preheat the oven to 180ºC (350°F).
Remove the dough from the refrigerator and roll about 1.5 tablespoons of dough into balls.
Coat the dough balls in powdered sugar.

Place the dough balls on a lined baking sheet, spacing them about 2 inches apart. Bake on the upper rack for 10-13 minutes or until you see air bubbles escaping from the crinkles of the cookies.
Let the cookies cool completely before adding the sprinkles.
