  • Cream the butter and sugar together in a large bowl until smooth.
    ½ cup sugar, ¼ cup light brown sugar, ½ cup unsalted butter, ¼ cup sugar
  • Add the eggs, and mix until fully combined. Then add the vanilla extract and mix well.

  • In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this mixture to the mixer, combining everything well.

  • Stir in the food coloring until you reach the desired shade of green.

  • Cover the dough and refrigerate for 2 hours to allow it to chill.
  • Preheat the oven to 180ºC (350°F).
  • Remove the dough from the refrigerator and roll about 1.5 tablespoons of dough into balls.
  • Coat the dough balls in powdered sugar.

  • Place the dough balls on a lined baking sheet, spacing them about 2 inches apart. Bake on the upper rack for 10-13 minutes or until you see air bubbles escaping from the crinkles of the cookies.
  • Let the cookies cool completely before adding the sprinkles.
