Air Fryer Strawberry Cupcakes are my favorite thing to bake when strawberry season hits. They come out fluffy, light, and full of real chopped strawberries with that natural sweetness only fresh fruit can bring. The strawberry cream frosting is smooth, buttery, and packed with flavor. One bite and you’ll already be planning your next batch.

Here’s how to pull these delicious cupcakes together from start to finish without any fuss or turning on the oven.

Get Your Cupcake Liners Ready

Start by lining your ceramic ramekins with muffin or cupcake liners, or use silicone baking cups that can hold wet batter well, even without support, then arrange them on the air fryer basket.

Combine the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined. Keeping the dry ingredients separate first helps the leavening distribute evenly so your cupcakes bake up with a consistent, fluffy texture.

Cream the Butter, Sugar, and Eggs

In a large batter bowl, beat the softened unsalted butter and sugar together with an electric mixer until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

This step builds the structure of your cupcake and gives it that tender, soft crumb. I use a hand mixer to quickly incorporate everything.

Mix the Batter and Fold in the Berries

Alternately add the dry ingredients and the milk to the butter mixture, beginning and ending with the dry mixture. Mix gently between each addition so you don’t overwork the cupcake batter.

Once everything is just combined, gently fold in the finely chopped strawberries with a spoon or a spatula. To achieve the best flavor and prevent excess moisture in your cupcakes, make sure you’re using fresh and not frozen strawberries.

Air Fry the Strawberry Cupcakes

Divide and pour the batter evenly among the prepared liners. Air fry at 350°F (180°C) for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.

Start checking for doneness at the 10-minute mark because air fryers vary slightly depending on brands, and overbaking can make the cupcakes dense and dry.

Work in batches if needed so the cupcakes cook properly. Let the cupcakes cool completely before frosting them.

Make the Strawberry Frosting

Beat the butter in a large bowl until it’s creamy and smooth. Gradually add the strawberry puree and sifted powdered sugar, mixing until the frosting is smooth, fluffy, and a beautiful natural pink.

Adjust the amount of puree depending on how thick or soft you want the consistency to be. Transfer to a piping bag fitted with your favorite piping tip.

Frost and Garnish

Once the cupcakes are fully cooled, frost them generously and garnish with fresh strawberry slices if you’d like. They’re ready to serve right away or chill until needed. Enjoy!

Cupcakes are surprisingly easy to transport as long as you keep them upright and protected. A cupcake carrier with individual slots is the best way to keep them stable and prevent the frosting from smearing during the drive.

If you don’t have one, place them snugly in a deep lidded container lined with a non-slip mat on the bottom to keep them from sliding.

In warm weather, keep them in an air-conditioned car or a cooler since the butter-based frosting softens quickly in the heat. Add the fresh strawberry garnish after you arrive for the freshest presentation.

The air fryer speeds things up nicely, which makes them easy to pull off even on a busy day. I love making these for spring birthdays, Mother's Day, and baby showers because they always look stunning on a dessert table.

Notes

Here are a few things I’ve learned from making these Air Fryer Strawberry Cupcakes more than once!
Use fresh strawberries, not frozen: Frozen strawberries release too much liquid and can make the batter watery and the texture dense, so stick with fresh for the best results.
Finely chop the strawberries: The smaller the pieces, the better they distribute through the batter and the less they weigh down any single bite.
Don’t skip alternating the dry and wet ingredients: Adding the flour and milk alternately keeps the batter smooth and prevents overmixing, which leads to tougher cupcakes.
Cool completely before frosting: If the cupcakes are even slightly warm, the butter-based frosting will melt and slide off instead of holding its shape.
Adjust the frosting consistency with puree: If the frosting is too thick, add a little more strawberry puree one teaspoon at a time. If it gets too soft, add a bit more sifted powdered sugar until it holds a swirl.
Store properly: Once frosted, keep the cupcakes chilled in an airtight container for up to 5 days. If unfrosted, you can store them at room temp for up to 3 days or freeze them for up to 3 months. Thaw frozen cupcakes completely before frosting them.

How to Store Leftovers

Store unfrosted cupcakes in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days once frosted. Because the frosting contains butter and fresh strawberry puree, keeping them chilled helps maintain the texture and keeps the frosting fresh.

When you’re ready to serve refrigerated cupcakes, let them sit at room temperature for about 20 to 30 minutes so the frosting softens back up to that creamy, fluffy texture.

For longer storage, you can freeze the unfrosted cupcakes for up to 3 months. Wrap each one individually in plastic wrap, or flash-freeze them on a baking sheet for an hour before wrapping to prevent sticking.

Once wrapped or frozen solid, place them in a freezer container to protect them from freezer burn. Thaw overnight in the refrigerator or at room temperature for a couple of hours, then frost fresh before serving.

What to Serve With Air Fryer Strawberry Cupcakes

They’re already a showstopper on their own, but they also pair beautifully with a scoop of vanilla ice cream or a dollop of fresh whipped cream on the side. A few white chocolate chips on top beside the berries add a nice touch, too.

If you’re putting together a dessert spread, they look stunning next to a strawberry shortcake, cake, or a fruit platter loaded with berries. For drinks, a glass of sparkling lemonade, iced tea, iced coffee, or a strawberry smoothie makes a refreshing match.
