I made these Air Fryer Easter Bunny Cookies and they came out perfectly golden with buttery vanilla and almond flavors that taste like something from a fancy bakery. I love how quickly they bake in the air fryer. With golden edges, delicate bunny shapes, and pastel icings in pink, yellow, and blue, these cookies are almost too pretty to eat. Almost.

Here’s how I make this cute and delicious sugar cookie recipe from start to finish, and I promise it’s so much fun and easier than it looks!
Preheat Oven and Prep Your Air Fryer
Preheat your air fryer to 320°F for 3 minutes, then line the basket with parchment paper so the cookies don’t stick and are easy to lift out.
Combine the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Setting this aside first makes it easier to gradually add it to the wet mixture later without overmixing.
Cream the Butter and Mix the Dough
In a large mixing bowl, beat the butter and sugar together with an electric mixer until you create a light and fluffy mixture. Mix in the egg, vanilla extract, and almond extract until everything is smooth.
Now, gradually stir in the dry ingredients just until the cookie dough comes together. Don’t overmix here or the cookies can turn out tough instead of soft.
Cut Into Bunny Shapes
Grab a rolling pin and roll the dough out on a lightly floured surface. Cut into bunny shapes of uniform sizes using a bunny-shaped Easter cookie cutter, keeping the thickness even so the cookies bake consistently in the air fryer.

Cook the Cookies in the Air Fryer
Place the cookies in the air fryer basket in a single layer, leaving a little space between each one for good air flow that helps with even baking.
Air fry at 320°F for 6 to 8 minutes, checking at the 6-minute mark, as air fryer models vary. Once the edges of the cookies start to turn lightly golden, that’s your cue to pull them out. Work in batches if needed.

Cool on a Wire Rack
Let the baked cookies cool slightly and rest for 5 minutes before transferring them to a wire cooling rack to cool completely. Don’t rush this step. If you ice them while they’re still warm, the icing will slide right off.

Make the Pastel Icing
Whisk together the powdered sugar and milk until the icing is smooth and spreadable. Divide it into separate bowls and tint each one with pastel gel food colors. I use different colors like pink, yellow, and blue.
I prefer using gel colors, which give you more vibrant pastel shades without thinning out the icing the way liquid food coloring can.
Decorate and Set
Pipe with a piping bag or drizzle the colored icing with a spoon over the fully cooled cookies, then shower them with sprinkles. Let the icing set completely before serving or stacking. Enjoy!

I usually serve mine on a beautiful, large oval serving platter or a tiered porcelain tray stand if I’m hosting buffet-style. These air fryer cookies also travel beautifully to school parties, Easter gatherings, and spring potlucks.
Once the icing has fully set, layer the cookies between sheets of parchment paper inside a sturdy cookie tin or airtight container to keep the decorations intact.
If you’re transporting them somewhere warm, keep the container in an insulated bag and out of direct sunlight to prevent the icing from softening. They hold up well at room temperature for the duration of most parties or school events.

How to Store Leftovers
Once the icing has fully set, store the cookies in an airtight container at room temperature for up to 3 days. Place parchment paper between layers to protect the icing and sprinkles from smudging or sticking together.
To freeze them, arrange the decorated cookies in a single layer on a freezer-safe sheet pan and flash-freeze for about 1 hour before transferring to a freezer-safe container with parchment between each layer.
They’ll keep beautifully in the freezer for up to 2 months. Thaw at room temperature for about 30 minutes before serving.
