Seasoned ground beef in a rich creamy sauce, layered with crushed nacho cheese Doritos and melty Jack cheese that comes out golden and bubbly from the oven. Hearty, cheesy, and irresistible.

I make this for busy weeknight dinners, family gatherings, and potlucks when I need something hearty and crowd-pleasing that feeds a group easily. Here’s how I put together the casserole with crunchy Doritos and layers of melty cheese from start to finish. It’s earned a permanent spot in my dinner rotation because it comes together so easily.
Preheat and Prep
Once the oven is preheated to 400°F (200°C), lightly grease a prepared baking dish with cooking spray. I always keep my oven thermometer inside so I know the temperature is spot on before anything goes in.
Brown the Beef
In a large skillet over medium heat, cook ground beef and yellow onion until the beef is no longer pink, then drain excess fat. I like breaking up the meat with this meat chopper so every bite has that fine, crumbly texture.
A clove of minced fresh garlic and a pinch of chili powder stirred in at this stage deepen the taco flavor beautifully.
Mix the Filling
Stir in the taco seasoning, diced tomatoes, green chilies, sour cream, and condensed cream of mushroom soup. Mix until well combined and heated through.

You can swap in cream of chicken soup for a milder flavor, or use plain Greek yogurt in place of sour cream for a tangier filling. A few tablespoons of softened cream cheese also make the mixture extra creamy, and diced jalapeños or diced red bell pepper add great color and heat.
Layer the Casserole
In the prepared baking dish, spread half of the meat mixture, then layer one-third of the crushed nacho cheese Doritos evenly over the top.
Cool Ranch Doritos work beautifully here, too, if you want a different flavor twist. I crush the Dorito chips right in the bag with a meat mallet to get the perfect mix of fine crumbs and bigger pieces.

Top with Cheese
Add the remaining beef mixture, then top with the remaining Doritos and sprinkle with the remaining cheese. Pepper Jack cheese, Monterey Jack, or a Mexican cheese blend all melt beautifully in place of plain Jack cheese.

I always keep my rotary cheese grater handy for shredding a block of cheese fresh because shredded cheese from a block melts so much better than pre-shredded.
Bake Until Bubbly
For 20 minutes bake uncovered, or until the cheese melts into an absolutely delicious golden, bubbly top.

Serve and Enjoy
Let cool slightly, then serve warm. Scoop generous portions onto plates and top with your favorite taco toppings, such as shredded lettuce, chopped cilantro, green onions, or extra sour cream. Enjoy!
If you’re bringing the casserole to a potluck or gathering, wrap the dish tightly in foil and tuck it into an insulated casserole carrier to keep it warm during transport.
For shorter trips, a thick kitchen towel wrapped around the dish works in a pinch. Add the final Doritos topping right before serving so the chips stay crunchy instead of softening on the ride over.

How to Store Leftovers
Let the leftover Dorito casserole cool completely, then store it in an airtight container in the fridge for up to 3 days. Reheat individual portions in the microwave, or warm the whole baking dish in a 350°F oven until heated through; the chips will soften a bit during storage.
For longer storage, transfer cooled portions to freezer-safe glass containers and freeze for up to 2 months. Thaw overnight in the fridge before reheating, and sprinkle fresh, crushed Doritos on top as you warm to bring back some of that signature crunch.
What to Serve With Dorito Casserole
