I made these Air Fryer Easter Bunny Cookies and they came out perfectly golden with buttery vanilla and almond flavors that taste like something from a fancy bakery. I love how quickly they bake in the air fryer. With golden edges, delicate bunny shapes, and pastel icings in pink, yellow, and blue, these cookies are almost too pretty to eat. Almost.

Here’s how I make this cute and delicious sugar cookie recipe from start to finish, and I promise it’s so much fun and easier than it looks!

Preheat Oven and Prep Your Air Fryer

Preheat your air fryer to 320°F for 3 minutes, then line the basket with parchment paper so the cookies don’t stick and are easy to lift out.

Combine the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt. Setting this aside first makes it easier to gradually add it to the wet mixture later without overmixing.

Cream the Butter and Mix the Dough

In a large mixing bowl, beat the butter and sugar together with an electric mixer until you create a light and fluffy mixture. Mix in the egg, vanilla extract, and almond extract until everything is smooth.

Now, gradually stir in the dry ingredients just until the cookie dough comes together. Don’t overmix here or the cookies can turn out tough instead of soft.

Cut Into Bunny Shapes

Grab a rolling pin and roll the dough out on a lightly floured surface. Cut into bunny shapes of uniform sizes using a bunny-shaped Easter cookie cutter, keeping the thickness even so the cookies bake consistently in the air fryer.

I have this cute Easter-themed cookie-cutter set, complete with Easter-y figures for shaping, such as a bunny, a rabbit face, an egg, and a chick.

Cook the Cookies in the Air Fryer

Place the cookies in the air fryer basket in a single layer, leaving a little space between each one for good air flow that helps with even baking.

Air fry at 320°F for 6 to 8 minutes, checking at the 6-minute mark, as air fryer models vary. Once the edges of the cookies start to turn lightly golden, that’s your cue to pull them out. Work in batches if needed.

Air-fry in a single layer for 6–8 minutes until the edges are lightly golden.

Cool on a Wire Rack

Let the baked cookies cool slightly and rest for 5 minutes before transferring them to a wire cooling rack to cool completely. Don’t rush this step. If you ice them while they’re still warm, the icing will slide right off.

Make the Pastel Icing

Whisk together the powdered sugar and milk until the icing is smooth and spreadable. Divide it into separate bowls and tint each one with pastel gel food colors. I use different colors like pink, yellow, and blue.

I prefer using gel colors, which give you more vibrant pastel shades without thinning out the icing the way liquid food coloring can.

Decorate and Set

Pipe with a piping bag or drizzle the colored icing with a spoon over the fully cooled cookies, then shower them with sprinkles. Let the icing set completely before serving or stacking. Enjoy!

Pipe or drizzle icing over cooled cookies, add sprinkles, and let set completely before serving.

I usually serve mine on a beautiful, large oval serving platter or a tiered porcelain tray stand if I’m hosting buffet-style. These air fryer cookies also travel beautifully to school parties, Easter gatherings, and spring potlucks.

Once the icing has fully set, layer the cookies between sheets of parchment paper inside a sturdy cookie tin or airtight container to keep the decorations intact.

If you’re transporting them somewhere warm, keep the container in an insulated bag and out of direct sunlight to prevent the icing from softening. They hold up well at room temperature for the duration of most parties or school events.

Air Fryer Easter Bunny Cookies

Air Fryer Easter Bunny Cookies are my favorite Easter baking tradition and the first thing to disappear from every cookie platter I bring them to. The dough comes together with a lovely hint of almond extract alongside the vanilla, giving them that bakery-style flavor you just can't get from a basic sugar cookie. The air fryer cooks each bunny perfectly golden in no time, and the pastel icing in pink, yellow, and blue topped with rainbow sprinkles turns every cookie into something truly festive. I love making them for Easter celebrations, cookie exchanges, spring gift baskets, and cookie platters because they always get the biggest reaction from kids and adults alike.

Notes

Here are a few things I’ve learned from making these that’ll help yours turn out perfectly every time.
Chill the dough if needed: If your cookie dough feels too soft to roll and cut cleanly, refrigerate it for 20 to 30 minutes before rolling. This helps the bunny shapes hold their detail during baking.
Keep the thickness even: Roll the dough to an even thickness so all the cookies bake at the same rate in the air fryer. Uneven thickness means some cookies will be over- or underdone.
Check at 6 minutes: Air fryers vary, so start checking your cookies at the 6-minute mark. You want lightly golden edges, not brown. They’ll continue to firm up as they cool.
Let them cool completely before icing: Icing warm cookies will cause them to melt and run. Wait until the cookies are fully cooled on the wire rack before decorating for the cleanest, prettiest results.
Use gel food coloring: Gel colors give you vibrant pastel shades without adding extra liquid that could thin out your icing. A tiny amount goes a long way, so start with a small dab and add more until you reach your desired shade.
Flash-freeze before stacking: Freeze the decorated cookies in a single layer on a tray for 1 hour to keep the icing and sprinkles intact and prevent them from sticking together, then store in a container at room temp for up to 3 days or freeze for up to 2 months.

How to Store Leftovers

Once the icing has fully set, store the cookies in an airtight container at room temperature for up to 3 days. Place parchment paper between layers to protect the icing and sprinkles from smudging or sticking together.

To freeze them, arrange the decorated cookies in a single layer on a freezer-safe sheet pan and flash-freeze for about 1 hour before transferring to a freezer-safe container with parchment between each layer.

They’ll keep beautifully in the freezer for up to 2 months. Thaw at room temperature for about 30 minutes before serving.

What to Serve With Air Fryer Easter Bunny Cookies

These pastel-iced bunny cookies are a natural fit on any Easter dessert spread. Pair them with a bowl of pastel M&Ms or Easter candy, chocolate chips, a spring fruit salad, or a pitcher of cold lemonade for a festive table that looks as good as it tastes.

They also look stunning arranged on a tiered dessert stand alongside other spring treats. For a fun Easter activity, set out bowls of extra icing and sprinkles and let kids decorate their own cookies right at the table.
