Avocado toast is more than just a trendy breakfast—it’s a simple, satisfying meal that comes together in minutes. A crispy slice of garlic-rubbed bread topped with creamy mashed avocado is a winning combination on its own, but adding toppings like fried eggs, balsamic-glazed tomatoes, or crumbled feta takes it to another level. Follow my simple instructions, and you’ll have the perfect avocado toast every time.
Toast the Bread
Preheat the oven to 400°F. Arrange the sliced French loaf on a baking sheet and brush each slice with extra-virgin olive oil.

Take a whole garlic clove and rub it over the surface of the bread for extra flavor. Sprinkle with flaky sea salt and black pepper, then bake for 8-10 minutes until golden and crispy. Let them cool slightly before topping.
Mash the Avocado
Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork, leaving some chunks for texture.

Stir in minced garlic, olive oil, salt, and pepper until well combined.
Option 1: Add Fried Eggs and Everything Bagel Seasoning
Heat a non-stick skillet over medium heat and spray lightly with cooking spray. Crack the eggs into the pan and cook until done to your preference.
Place the eggs on top of the avocado toast and sprinkle with Everything Bagel Seasoning or sesame seeds. You can even add a dash of hot sauce if you love all things spicy.

Option 2: Add Balsamic Tomatoes and Basil
Halve the cherry tomatoes and toss them with balsamic vinegar and a pinch of salt. Spoon them over the avocado toast and top with fresh basil (fresh herbs give much better flavor).
Sprinkle salt flakes for an extra pop of flavor.
Option 3: Add Feta and Olives
Top the avocado toast with crumbled feta cheese and halved olives. Sprinkle with dried oregano and drizzle with a little olive oil for a Mediterranean-inspired twist.

Recipe Notes and Expert Tips
I’ve put together some key tips to make sure your avocado toast turns out perfectly every time.
- Choose ripe avocados: They should be slightly soft when pressed but not mushy. Overripe avocados can be too watery, while underripe ones will be hard to mash.
- Toast the bread until golden brown: A crispy base holds up better under the avocado and toppings, preventing sogginess.
- Use fresh garlic for flavor: Rubbing a whole garlic clove on the bread adds a subtle depth without overpowering the avocado.
- Season well: Avocados need salt to bring out their natural flavor. Taste the mixture before spreading it on the toast.
- Variations: These three options are just a starting point. Try adding smoked salmon, bacon, radishes, red onion, a pinch of red pepper flakes, or a drizzle of hot honey for a different twist.
- Assemble right before serving: The longer the avocado sits, the more it oxidizes and browns. For the freshest taste, mash and spread just before eating.
- Bread: I’ve used French bread, but you can also use whole grain bread, sourdough bread, or bagels and have bagel avocado toast.
How to Store Leftover Avocado Toast
Avocado toast is best enjoyed fresh, but if you have leftovers, store the mashed avocado separately in an airtight container. Press plastic wrap directly onto the surface to minimize browning. It will keep in the fridge for up to 24 hours.
Toasted bread should be stored at room temperature in an airtight container. Fully assembled avocado toast does not store well, as the bread will become soggy. Freezing is not recommended.
