Make the Roux

Create the Gravy
Add the chicken broth and whole milk, then simmer for 7–8 minutes until it thickens into a pourable gravy that coats the back of a spoon. As it cooks, the herbs bloom and fill the pot with a savory, comforting aroma.
Add Turkey and Peas
Stir in the frozen peas and chopped turkey, then remove from heat. Taste and adjust seasoning with more salt, pepper, thyme, or rosemary if needed.
Let the filling cool for 10 minutes. This cooling step is important so your crust doesn’t get soggy when you assemble everything.
Assemble the Pot Pie
Transfer the cooled filling to a 9-inch pie dish, then lay the cold pie dough on top. Trim the edges, fold the overhang inward to form a thick rim, and crimp it with a fork or your fingers. Cut a few slits for steam and lightly brush the top with egg wash using a silicone pastry brush.

Air Fry Until Golden
Bake in the air fryer at 320°F (160ºC) for 20 minutes, or until the crust turns golden. Check at the 10-minute mark and cover the edges with foil or a pie crust shield to keep them from browning too fast.
Keep an eye on the crust so it crisps without overbrowning. The cooking time depends on the size of the pot pie, so larger or family-size versions may need extra time to heat through in the center.
Remove from the air fryer and cool for 5 minutes. Keep your pot pie in a closed air fryer basket to preserve heat until you’re ready to serve. The crust should be crispy and golden, and the filling should be bubbling and hot throughout.

Notes
- Cool the filling completely: Let your filling sit for at least 10 minutes before adding the crust so the heat doesn’t make the dough soggy or cause it to shrink.
- Use cold pie dough: Keep your refrigerated pie crust cold until you’re ready to use it so it’s easier to handle and creates a flakier texture when baked.
- Cut proper vents: Make 4-5 slits in the top crust so steam can escape during cooking, which prevents the crust from getting soggy and lets the filling bubble properly.
- Don’t skip the egg wash: Brushing the crust with beaten egg gives you the beautiful golden color and creates a slight barrier that keeps the crust crispy even with the moist filling underneath.
