Line the Air Fryer Basket
Start by lining your air fryer basket with parchment paper. Pre-cut air fryer basket parchment or silicone air fryer liners work best here because they fit snugly and keep all the buttery juices from dripping down into the drawer.
Skipping this step makes cleanup a real headache, especially with all the oil and butter involved (just a heads-up!).
Cook the Onions and Peppers
Add the butter and thin slices of onions and green bell peppers directly to the lined air fryer basket.
Air fry at 400°F (200°C) for 3 minutes, give everything a good stir, then air fry for another 2 minutes until the veggies are softened and just starting to caramelize. Remove them from the basket and set them aside for now.
Air Fry the Ribeye
Add the thinly sliced ribeye steak to the basket, drizzle with olive oil, and season with salt, pepper, and garlic powder. I usually freeze the ribeye for about 30 minutes beforehand, so I can slice it neatly with my carving knife without turning it into shreds.
Air fry at 400°F (200°C) for 7 minutes, flipping or stirring halfway through so the steak cooks evenly. You want the meat nicely browned with a little color on the edges.

Melt the Cheese Over Everything
Return the cooked, sliced onions and green peppers to the basket with the cooked steak, then mix everything together.
Lay the provolone cheese slices flat over the top of the steak mixture and continue cooking for an additional 5 minutes, or until the cheese melts and bubbles.
The provolone will melt right into all the gaps and coat the steak beautifully. If you prefer a milder cheese flavor, you may swap the provolone for white American cheese.

Toast the Hoagie Rolls
Remove the filling from the air fryer basket and set it aside, and discard the air fryer liner. While the filling rests, brush your hoagie rolls with melted butter and arrange them in the air fryer in a single layer with no filling inside.
Lightly toast at 350°F (180°C) for about 5 minutes, or until golden with a slightly crisp texture on the outside. You want a bit of crunch right there while the inside stays soft enough to soak up all those juices.

Assemble and Serve

How to Store Leftovers
Store the steak and pepper filling in an airtight container in the fridge for up to 3 days. Keep it separate from the rolls so the bread doesn’t get soggy sitting in the juices.
When you’re ready to eat, warm the filling back up in the air fryer at 350°F (180°C) for about 3 minutes, or reheat it in the microwave for 1 to 2 minutes or in a skillet over medium heat until heated through, then load it into a fresh toasted hoagie roll.
The filling also freezes well for up to 2 months. Put it in a freezer-safe container, then thaw it overnight in the fridge before reheating.
