Air Fryer Pita Chips
Air Fryer Pita Chips are one of those snacks I make on a whim and end up completely hooked on every single time. Pita triangles brushed with olive oil and dusted with za’atar come out of the air fryer light, crunchy, and perfectly toasted with that earthy herby seasoning in every bite. Simple, crispy, and absolutely impossible to stop snacking on.

I make these for snack boards, mezze spreads, game day, or just munching on while putting together dinner. I’ve served them at get-togethers, and they always disappear fast. If any manage to survive, they’ll stay crispy for a few days at room temperature or up to 2–3 months in the freezer.

Here’s how to make this easy homemade pita chips recipe from start to finish in just a few easy steps.
Prep and Season the Pita
Start by cutting each homemade or store-bought pita bread into two thin rounds by splitting it along the seam with a sharp knife or kitchen shears, if you’re using those kinds with pita pockets.
You can use regular or whole-wheat pita bread, but even stale pita bread left out overnight works perfectly fine. Most pita bread variations contain gluten, so if you prefer it gluten-free, look for gluten-free options.
Brush both sides generously with olive oil using a pastry brush so the seasonings stick well. You can switch to extra-virgin olive oil for a more robust flavor, or to avocado oil for a more neutral taste. I use a silicone pastry brush for coating, but an oil spray also works.


Sprinkle with salt and za’atar seasoning. For a cleaner taste, you may swap the table salt for kosher salt. Once both sides are coated, cut each round into small pita triangles or pita wedges with a pizza cutter or a pastry wheel, just like you’re cutting a little pizza.

Air Fry Until Golden and Crispy
Arrange the pita bread pieces in a single layer in your air fryer basket lined with pre-cut square parchment paper or a silicone air fryer liner, making sure none of them overlap.
Work in batches if needed. Air fry at 350°F (180°C) for about 5 minutes, or until the seasoned pita chips are light golden brown and just perfectly crispy. Watch the cook time closely and rotate any pita pieces that are browning faster so they don’t overbrown.

Cool and Serve
Let the air-fried pita chips cool slightly before serving. They’ll crisp up even a little more as they cool, so give them just a minute or two before diving in. Serve them on a platter with your favorite dips or enjoy them straight from the basket!

How to Store Leftovers
Once cooled completely, transfer leftover pita bread to an airtight container and store it at room temperature. Just keep them loosely layered in the container so air can circulate and they hold their crunch as long as possible.
They’ll stay crispy for up to 1 week, though in my experience, they rarely last that long. I don’t recommend refrigerating them since the moisture will soften the crispy chips.
If you made a big batch, you can freeze them in a single layer on a baking sheet for about 1 hour, then in a resealable freezer bag for 2 to 3 months. Thaw completely at room temp before serving, or pop them back in the air fryer to keep them crisp.
What to Serve With Air Fryer Pita Chips
These crispy pita chips are made for dipping. Hummus is the obvious pairing, but tzatziki, baba ganoush, and labneh are all fantastic options that complement the za’atar seasoning really well.
You can also set them out alongside a full mezze spread with olives, roasted peppers, and fresh veggies for something that feels a little more filling without any extra effort. A light squeeze of lime juice adds a bright, citrusy note that lifts the earthy za’atar flavor.
They also work great as a side with soups and salads. Try them next to a big bowl of lentil soup or a simple cucumber and tomato salad for a light, satisfying meal that comes together quickly.
